Nourishing Carob Chip Cookies with Warming Spices
I whipped up this simple batch of gluten-free, dairy-free cookies for some dear friends, and oh my goodness—they turned out incredibly moist and chewy! I didn't expect them to be this tasty. The coconut oil (or ghee, if you prefer) keeps them soft and rich, while the carob chips melt just enough for that perfect bite.
Ingredients
1 cup almond flour
1 cup brown rice flour
1/3 cup of maple syrup or other sweet tasting substitutes
1/4 cups of coconut oil or ghee (melted and cooled)
1/4 teaspoon baking powder
1/2 cup dairy-free carob chips
6 cardamom pods, lightly crushed (remove pods after mixing or before baking)
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C).
Crush the cardamom pods and mix them into the dough along with the cinnamon for that warm, aromatic depth. Combine all ingredients until a dough forms. Scoop into balls, place on a parchment-lined sheet, and gently flatten.
Bake for 15 minutes until edges are lightly golden. Cool on the sheet—they firm up beautifully as they rest.
